Oil has been produced following traditional practices since the very early times. The existence of a number of oil mills in the area, along with olive trees in among carob and almond trees demonstrates the importance of this production, which was mainly aimed at satisfying the demands of local markets. Nowadays, there are two modern oil mills which comply with all current hygiene legislation. The extra virgin olive oil produced therein is of excellent quality. The most typical types of olives found on Ibiza are the empletre (traditional local variety, also known as Ibizan), the arbequina and the picual. The empletre and arberquina varieties produce fruity oils and when blended with picual they stay fresh for a longer time. The picual variety, meanwhile, produces oils of a stronger flavour.
